As I continued to let the Lord know how special I wanted this food to be, my wheels began turning. I pulled the frozen chicken breasts out of the freezer, and began putting together what is now my husband's favorite at-home meal. We call it "Jen's Chicken Fajita Sandwiches". The aroma of grilled chicken, garlic, and onion filled the house as a masterpiece was created. I say that because once I got it put together it looked almost gourmet and tasted even better. We were amazed.
I made my husband a plate and he sat up in bed with what strength he could muster. Not only did he eat one of the sandwiches and the homemade onion rings, but he ate two!
I am writing this not to give myself credit, but because I want to testify of the Lord's love for us. I believe that the Lord wants us to be satisfied and content. But what I love most about this experience is that I felt the Lord's presence with me in the kitchen that day. The truth is that he absolutely loves it when we invite Him into our daily tasks and the small details of our day. He cares about the little things... and He is powerful to meet our needs and give us the desire of our hearts.
"A man can do nothing better than to eat and drink and find satisfaction in his work. This too, I see, is from the hand of God, for without Him, who can eat or find enjoyment? To the man who pleases Him, God gives wisdom, knowledge, and happiness..."

Jen's Chicken Fajita Sandwiches
4 Chicken breasts baked until no longer pink (sliced to reduce width)
8 Sliced Sandwich Thins
Sour Cream
Fresh Spinach
Jar of Favorite Salsa
1 cup Shredded Cheddar Cheese (more or less as desired)
Lawry's Garlic Seasoning with Parsley
2 Tbsp. Olive Oil
1-2 Large tomatoes cut into wedges
1 onion sliced to make rings
1. Cut Chicken breasts to thin slices for sandwiches;
Season with garlic seasoning or plain salt; Broil until no longer pink;
Pull from oven and set aside
2. In a sauté pan put olive oil, tomatoes, onion, and garlic seasoning into pan
and heat until slightly tender. Set aside.
3. Take chicken breasts and drain the juice from the pan and pour your favorite
salsa over the chicken and cover with Shredded Cheddar Cheese.
4. Bake chicken in the oven on 350 until cheese is completely melted.
To make the sandwiches:
Spread sour cream on the bread slices as desired. Then place the cooked salsa chicken, fresh spinach, and sautéed tomatoes and onion piled high on the bread... and there you have it!
